Boneless Chicken Thighs

INGREDIENTS:

  • 2 pounds boneless, skinless chicken thighs, (preferably organic)
  • 1 teaspoon minced organic garlic
  • 2 teaspoons hickory smoke seasoning, (we use Savory Spice Red Rock Hickory Smoke.)
  • 3 tablespoons Red Duck organic smoky ketchup
  • 2 tablespoons Sir Kensington organic mayonnaise
  • 1 tablespoon Bragg Apple Cider Vinegar
  • pinch of sea salt and organic black pepper

 

INSTRUCTIONS:

  • Mix the garlic, ketchup, mayo, vinegar, hickory seasoning, sea salt, and pepper.
  • Transfer the chicken thighs into a glassware baking dish.
  • Pour the mixture over the chicken, and stir, thoroughly coating each thigh.
  • Cover the dish with plastic wrap and refrigerate for at least 3 hours, (overnight is preferable.)
  • Preheat charcoal grill to high heat.
  • Place the chicken thighs on the hot grill with the smooth sides down.
  • Grill for 3 minutes, or until grill marks appear.
  • Turn the thighs over and cook the other side for 5 minutes, or until grill marks appear.
  • Continue to grill for 12 minutes, turning the thighs every 2 minutes.
  • Serve and enjoy!

We would rather not see Summer end, so we do a lot of grilling all through the Fall. This smoky grilled chicken thigh recipe captures the feel of Autumn bonfires and fills the crisp Fall air with the delicious aroma of hickory grilled chicken. We prefer it for dinner, but enjoying it for lunch on a crisp fall day is just as nice. At the beginning of the Summer I discovered Red Duck organic smoky ketchup at Shop Rite and I used it for both beef and turkey burger flavoring along with Savory Spice Red Rock Hickory Smoke seasoning. These two ingredients were the only things added to our burger meat and we absolutely enjoyed the smoky flavor! So I attempted a mixture for boneless, skinless chicken thighs and came up with this savory recipe. We hope that you enjoy it!
