Cashew-Ginger Roasted Sweets

SWEET POTATO INGREDIENTS:
* Two 8 ounce sweet potatoes
* Drizzle of Olive oil
* Pinch of sea salt
* Pinch of pepper
CASHEW-GINGER INGREDIENTS:
* 1/2 cup raw organic cashews
* 1/2 lime, juiced
* 3 Tbsp olive oil
* 1 teaspoon sesame oil
* 2 Tbsp apple cider vinegar
* 1 tsp Sriracha
* 2 teaspoons minced ginger
* 1 garlic glove
* 1 Tbsp nutritional yeast
* Pinch of sea salt
SWEET POTATO INSTRUCTIONS:
* Slice sweet potatoes into circles and place on baking sheet.
* Drizzle with olive oil and a pinch of sea salt and pepper.
* Bake at 400 degrees for 25-30 minutes.
CASHEW-GINGER INSTRUCTIONS:
* Combine all ingredients in a food processor, blender, or vita mix .
* Add 5-10 Tbsp warm filtered water to get a thinner consistency, or until you
  get the consistency you desire.
* Drizzle over the sliced sweet potatoes & serve!
This recipe may be used as a carbohydrate for Meals 2 or 3 on the Remedy Recipes book format.
Portions: 4 oz. of sweet potato for women & 1 & 1/2 tbsps of cashew-ginger sauce / 8 oz. sweet potato for men & 3 tbsps of cashew-ginger sauce
This delicious cashew-ginger sauce greatly compliments the flavor of sweet potatoes. It’s also great as a dip with sliced cucumbers, peppers, or celery!  We also recommend it drizzled over fish, pork, lamb, or poultry. We hope that you enjoy it!!!
