Chic Pea Medley

Ingredients:
Women:

  • 2 large hardboiled eggs, cut into quarters
  • 1/2 cup chic peas, (For added flavor, lightly coat in olive oil, a pinch of minced parsley, & a pinch of minced garlic, & pre-roast in the oven on a baking sheet at 400 degrees for 12 minutes.)
  • 1/2 yellow pepper, diced
  • 1/2 oz. shaved Parmesan
  • 1 tbsp Spectrum Canola Mayonnaise
  • 1 tbsp dried basil
  • 1 tbsp diced red onion
  • 1/2 teaspoon Bragg Apple Cider Vinegar
  • 1 packet Sweet Leaf stevia
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon fresh minced Italian Parsley
  • 1/4 teaspoon black pepper
  • 1 cup baby leaf arugula

Men:

  • 4 hardboiled eggs, cut into quarters
  • 1 cup chic peas, (For added flavor, lightly coat in olive oil, a pinch of minced parsley, & a pinch of minced garlic, & pre-roast in the oven on a baking sheet at 400 degrees for 12 minutes.)
  • 1 yellow pepper, diced
  • 1 oz. shaved Parmesan
  • 2 tbsp Spectrum Canola Mayonnaise
  • 2 tbsp dried basil
  • 2 tbsp diced red onion
  • 1 teaspoon Bragg Apple Cider Vinegar

Instructions:

  • Mix all ingredients except the baby leaf arugula in a large mixing bowl, cover, & let chill.
  • When about to serve, mix in the baby leaf arugula.
