Chic Pea Medley

Ingredients:

Women:
2 large hardboiled eggs, cut into quarters
1/2 cup chic peas, (For added flavor, lightly coat in olive oil, a pinch of minced parsley, & a pinch of minced garlic, & pre-roast in the oven on a baking sheet at 400 degrees for 12 minutes.)
1/2 yellow pepper, diced
1/2 oz. shaved Parmesan
1 tbsp Spectrum Canola Mayonnaise
1 tbsp dried basil
1 tbsp diced red onion
1/2 teaspoon Bragg Apple Cider Vinegar
1 packet Sweet Leaf stevia
1/2 teaspoon minced garlic
1/2 teaspoon fresh minced Italian Parsley
1/4 teaspoon black pepper
1 cup baby leaf arugula

Men:
4 hardboiled eggs, cut into quarters
1 cup chic peas, (For added flavor, lightly coat in olive oil, a pinch of minced parsley, & a pinch of minced garlic, & pre-roast in the oven on a baking sheet at 400 degrees for 12 minutes.)

2 packets Sweet Leaf stevia

2 cups baby leaf arugula

Instructions:
Mix all ingredients except the baby leaf arugula in a large mixing bowl, cover, & let chill.
When about to serve, mix in the baby leaf arugula.
