
This month I created two different combos featuring some interesting blends of ingredients that are relatively easy to make, & provide a hearty yet light & fresh-style meal.
Items that you’ll need:
A medium-size cooking pot, (for the quinoa-brown rice blend.)
A medium-size bowl to mix your ingredients in.
CREATIVE COMBO I. Ingredients/Instructions:
Pre-cook 1 Box Near East Quinoa-Brown Rice Blend
(Flavor: Roasted Red Pepper & Basil) (Women 1/2 cup, Men 1 cup)
1/2 cup organic baby leaf spinach
1/2 cup organic shredded red cabbage
1/2 cup organic baby leaf arugula
1/2 shredded cucumber
Dice Trader Joe’s Grilled Balsamic & Rosemary Chicken Breast
(No cooking is necessary, Women 2 oz., Men 4 oz.)
1 can Nature’s Promise organic kidney beans
(Women 1 oz. , Men 2 oz.)
2 tbsp diced scallions
1/2 cup roasted red pepper
2 tbsp minced fresh basil
Mix all the ingredients together & top with a drizzle of olive oil.
Serve & enjoy!
CREATIVE COMBO II. Ingredients/Instructions:
Pre-cook 1 Box Near East Quinoa-Brown Rice Blend (Flavor: Rosemary & Olive Oil) (Women 1/2 cup, Men 1 cup)
1/2 cup organic baby leaf spinach
1/2 cup organic shredded red cabbage
1/2 cup organic baby leaf arugula
1/2 shredded cucumber
Dice pre-grilled flank steak marinated in Lea & Perrins Worcestershire Sauce & a pinch of minced garlic
(Women 2 oz., Men 4 oz.)
1 can Nature’s Promise organic black beans
(Women 1 oz., Men 2 oz.)
2 tbsp diced red onion
1/2 sliced avocado
2 tbsp minced English Thyme
Mix all the ingredients together & top with a drizzle of olive oil.
Serve & enjoy!
