KETO Eggnog Cheesecake



KETO Cheesecake Crust:

  • 2 cups crushed roasted and salted cashews, (blended finely)
  • 5/8 cup melted organic butter

KETO Eggnog Cheesecake Filling:

  • 2 cups cream cheese
  • 1 cup sour cream
  • 3 large organic eggs
  • 3/4 cup superfine monkfruit
  • 1- 1 1/2 tbsp  ground cinnamon (1-mild / 1 1/2-strong)
  • 1 tbsp vanilla extract
  • 1/2-full teaspoon ground nutmeg (1/2-mild / full-strong)
  • 1 tbsp rum extract



KETO Cheesecake Crust:

  • Preheat oven to 325 degrees.
  • Line a 7 inch springform pan with parchment paper.
  • In a high speed blender add the crushed cashews and blend until fine consistency.
  • Melt the butter and add to the cashews and blend for a few seconds to combine.
  • Transfer the crust mixture into the springform pan and use the back of a spoon to spread evenly and flatten.
  • Refrigerate the crust while you prepare the filling.

KETO Eggnog Cheesecake Filling:

  • In a large bowl whisk the cream cheese, sour cream, eggs, monk fruit, cinnamon, vanilla extract, nutmeg, and rum extract with an electric hand mixer until fully incorporated.
  • Remove the pie crust from the refrigerator and add the cheesecake filling to it.
  • Place the cheesecake in the oven, and bake for one hour at 325 degrees.
  • Turn off the oven and open the oven door slightly.
  • Allow the cheesecake to cool completely.
  • Refrigerate for at least 4 hours before serving. Refrigerating overnight gives the cheesecake better body.

For portions, I recommend having a modest slice. It’s fairly filling, so a modest slice is plenty. You can also freeze some individual slices to enjoy it as a frozen dessert.
