Marinated Elk Steak Summer Slaw Endive Appetizer

Remedy Asian Endives
1 package endive ( endive boats )

1 tbsp sesame seeds
1 tbsp sunflower seeds
(1) 14 0z. bag Dole Summer Garden Blend ( pre-shredded green cabbage, red cabbage, radishes, romaine, carrots, green onion )
3 tbsp Spectrum Canola Mayonaise
1 tbsp lemon juice
1 teaspoon dijon
1/4 cup minced green onion
1 teaspoon low sodium Japanese Tamari Sauce
1 teaspoon rice vinegar

Mix ingredients, place in individual endive boats, chill, & serve.

( This is a healthy appetizer for BBQ’s or parties that you may have in addition to your regular meal plan. Enjoy! )

Marinated Elk Steak ( You may use Skirt Steak or Flank Steak in place of elk.)

1 pound elk tenderloin steak marinated in Lea & Perrins Worcestershire Sauce & 1 tbsp minced garlic ( Marinate overnight. )

Grill, turning regularly, until medium rare. ( Elk has less fat, so be sure to keep an eye on it. It will cook quickly, and for the price, you do not want to overcook! )

(1) 14 oz. bag Dole Classic Coleslaw ( pre-shredded green cabbage & carrots )
1/2 cup shredded red cabbage
5 tablespoons Bragg Apple Cider Vinegar
3 tablespoons Spectrum Canola Mayonaise
2 tablespoons Truvia Baking Blend ( or 2 packets Sweet Leaf Stevia )

Mix together, chill & serve.

(The marinated Elk Steak & Summer-Slaw may be used for Meal 4 on the Remedy Recipes format. Men: 6 oz. portion of steak, 1 cup portion of coleslaw, Women: 3 oz. portion of steak, 1 cup portion of coleslaw. You may add a green salad as well. Note: I usually do not permit carrots in the Remedy Recipes format, however, the amount included in these recipes is not substantial, and is Remedy Recipes Approved. Enjoy!)
