Remedy Veggie Patty

Ingredients:

  • 1 can Nature’s Promise Organic Black Beans (15.5 oz. can)
  • 1/2 cup diced Portabella Mushroom
  • 1/4 cup diced onion
  • 1/4 cup diced roasted red pepper
  • 1/2 teaspoon Nature’s Promise minced garlic
  • 1 teaspoon Dean Jacob’s Tuscany Blend seasoning
  • 1/2 cup unsweetened shredded organic coconut
  • 2 eggs, (Vegans may exclude this ingredient.)
  • 2 tbsp shredded Parmesan, (Vegans may exclude this ingredient.)

Instructions:

  • Preheat oven to 360 degrees.
  • Mash the entire can of black beans in a mixing bowl.
  • Add in all the other ingredients and mix thoroughly.
  • Form into 4 even patties, with approximately a half inch thickness.
  • Spray a baking sheet with Olive Oil Spray, (Nature’s Promise.)
  • Place the patties with an inch in between.
  • Cook in oven for 15-18 minutes.
  • Ready to serve!

 
Portions: 1 patty for women/ 2 patties for men
You may top the patty with Nature’s Promise Ketchup or Dijon Mustard & a pinch of  shredded Parmesan or Cheddar. If you are using this recipe as Meal 4 on the Remedy Recipes format, you may have a 1 cup portion of a Remedy Recipes Approved vegetable & a side salad. If you are using this recipe as a Meal 2 or Meal 3, you may add some roasted red skin potatoes seasoned with Dean Jacob’s Tuscany Blend seasoning to compliment the patties. (1 medium red skin potato for women/ 1 large red skin potato for men.) (Dean Jacob’s seasoning is available at Uncle Giuseppe’s.) Also add a vegetable to Meals 2 & 3.
One of our daughters is a vegetarian. She eats eggs & Greek yogurt, but her other protein options are limited to black beans, kidney beans, cannellini beans, & lentils. (I’m happy that she has eggs on a daily basis, because of the quality of the protein.) I wanted to create a veggie patty without all the fillers that you find in so many that are out there. I used shredded unsweetened coconut as an emulsifier, because as you know, flour of any kind is not approved on my plan. The Portabella Mushroom also acts as an emulsifier. It’s an interesting combination, but it holds together well, and doesn’t overpower with coconut flavor. The seasoning, peppers, onion, & garlic provide a good balance of flavor, while the black bean mash becomes the meat of the patty.
We hope that you enjoy this tasty patty. If you’re a vegetarian, it’s perfect as is. If you’re a vegan, simply eliminate the eggs & Parmesan. (If you’re neither vegetarian nor vegan, have a real dang burger! LOL.) Just kidding. You may actually like this one, and it provides great fiber, & healthy, organic ingredients.
