Savory Quinoa Salad


1 box Near East Roasted Pepper & Basil Quinoa Blend
5 green onions ( or scallions ) ( 2/3 cut white to green )
2 chopped avocados
1 diced red pepper
1/2 tbsp extra virgin olive oil
2 limes ( fresh squeezed )
1 & 1/2 teaspoons cumin
1 can black beans ( drained & rinsed thoroughly )
Cook quinoa: – In a medium saucepan, bring quinoa blend, 1 teaspoon olive oil, and 1 & 3/4 cups water to a boil.
– Turn heat to a medium boil, add contents of Near East spice package & mix well.
– Boil gently on low for 14-17 minutes until water is absorbed.
– Cover; remove from heated surface. Let it sit for 5 minutes.
Add the other ingredients, except the black beans.
For men, measure a 1 cup portion of the quinoa salad & mix in 6 oz. black beans.
For women, measure a 1/2 cup portion of the quinoa salad & mix in 3 oz. black beans.
The Savory Quinoa Salad may be used as Meal 2 or 3 on the Remedy Recipes format. It’s a great meal to take along to the beach & has just the right zest for a delicious Summery sustenance!
