Stuffed Pepper Soup

Ingredients:

  • 1 pound Nature’s Promise Lean, Organic, Grass-fed Ground Beef
  • 2 tbsp’s olive oil
  • 1 small white onion, chopped
  • 1/2 medium green pepper, diced
  • 1/2 medium red pepper, diced
  • 1 tbsp minced garlic
  • 15 oz. Nature’s Promise Organic Tomato Sauce
  • 1 28oz. can petite diced tomatoes
  • 14.5 oz. low sodium beef broth
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 & 1/2 tbsp fresh Italian parsley, chopped
  • a pinch of sea salt
  • a pinch of black pepper

Instructions:

  • Heat 1 tbsp olive oil in a large pot, over medium heat.
  • Once heated, add 1 pound Nature’s Promise Lean, Organic, Grass-fed Ground Beef to pot.
  • Add a pinch of sea salt & a pinch of black pepper to season the beef.
  • Cook, stirring occasionally until browned.
  • Drain, and place on a plate lined with paper towels, (to absorb some of the oils.)
  • Heat remaining 1 tbsp olive oil in the pot.
  • Add 1/2 diced red pepper, 1/2 diced green pepper, 1 small chopped white onion, and sauté for 3 minutes.
  • Add 1 tbsp minced garlic, and sauté for a 1/2 minute longer.
  • Add 15 oz. Nature’s Promise Organic Tomato Sauce, 1 28oz. can petite diced tomatoes, 14.5 oz. low sodium beef broth, 2 & 1/2 tbsp fresh, chopped Italian parsley, 1/4 teaspoon dried oregano, 1/2 teaspoon dried basil, and the cooked beef.
  • Add a pinch of sea salt & a pinch of black pepper.
  • Bring the medley to a light boil, then reduce to low heat.
  • Cover the pot, and allow to simmer for 30 minutes, stirring occasionally.
  • When serving, add a pinch of fresh, chopped Italian parsley & some shaved or grated Parmesan for garnish & flavor.

This delicious soup recipe may be used as Meal 4 on the Remedy Recipes book format.
Serving/ portion: 1 cup for women, 2 cups for men.
Brown rice may be added to this recipe, to be used for Meals 2 & 3 on the Remedy Recipes book format. (1/2 cup for women, 1 cup for men.)
I have to give my cousin, Christina the credit for this tasty recipe! Christina recently made this for a Christmas party & it was a hit with everyone! I thought it would be a perfect January or Winter soup recipe, so here it is! My cousin, Christina has been one of the best chefs that I know! For years, we would travel to my family’s house in the Catskills, and we would all help with the cooking. We learned a lot from our parents & grandparents, but we also learned from trial & error, and much of the skill of cooking was self-taught. Today, we’re all still creating, cooking, & enjoying new recipes. I’m glad to share this one with you! Happy New Year & health & prosperity in the years to come!!!
